Saturday Superfood Stack…
I made these Gluten-Free Pancakes for my uncle & cousin. They are used to the “Standard American Diet” so when I feed them, I keep that in mind. I don’t want to shock their system too much by going too extreme the other way. I meet them Somewhere in between by creating a familiar comfort food Saturday Breakfast with a healthy twist. A little technique I like to call, “stealth health,” where I sneak in high vibe superfoods wherever & whenever I can!
I used gluten free flour and added ground flax with organic almond milk, market blueberries & vanilla bean to make these mini pancakes “super”.
Then I took it to the next level with cinnamon maple syrup & Naikela Superfood Powder …. Not to mention, the freshies on top– antioxidant-rich, just picked blueberries and bananas.
As always, I encourage you to “make it your own” and do it how you want it. I do recommend checking out the Naikela Superfood powders though. They are all organically grown by a sweet family on the Island of Kauai. They have several powder combinations, the one I used today- Kauai Cleanse is the most medicinal with really high players to combat disease and promote wellness at its finest.

1-1/4 cups Gluten Free Flour Blend
1 tbsp baking powder
1/2 tsp mineral salt
1 tbsp maple syrup/ coconut sugar
1 tsp baking soda
1-1/4 cups nut/seed/oat/coconut milk
2 eggs + 1 TBS ground flax OR “flax egg” – 2 TBS ground flax mixed with 5 TBS water
2 tbsp melted coconut oil
1/2 tsp vanilla extract/ 1/2 vanilla bean scrapped
1/8 tsp nutmeg
1 cup fresh or frozen blueberries
Grade B Maple Syrup
1 Tsp Cinnamon
Handful Fresh Blueberries
*Naikela Botanitcals~ Kauai Cleanse Everything Powder
•Combine dry ingredients in medium bowl.
•Whisk together the liquid ingredients in large bowl.
•Add dry to liquid, combine well.
•Add Blueberries and stir.
•Preheat griddle or pan to medium heat.
•Pour batter by 1/3 cupfuls onto coconut oiled griddle/pan.
•Cook until bubbles appear and bottom is golden brown.
•Flip and cook a minute or two longer.
•Gently warm maple syrup & cinnamon
•Top pancakes with syrup, fruit & Naikela powder* or however you want.
